Instructions:

1. arrange shredded lettuce leaves on 4 serving plates.

Cut melon into quarters lengthwise. Remove seeds and score the flesh 2, 5 cm apart each way down to the rind. Cut close to melon rind and loosen flesh.

3. melon cubes with the strawberry and cucumber slices on the salad bed form.

For the dressing, add the mint leaves, cucumber, yogurt, lime or lemon zest, sugar and ice cubes to a hand blender or food processor. Process for about 15 seconds until mixture is smooth. Or chop the cucumber and mint, crush the ice cubes and mix with the other ingredients.

Pour a little dressing over the leaf salad and bring to the table. Garnish with fresh mint sprigs.

However, make sure the ingredients are well chilled. It is important that the finished dressing is refreshingly chilled.

Tip: Use a regular or light yogurt, yes, as needed!
