For the Blunzn with apple compote, first prepare the apple compote. Peel and core the apples. Cut into small cubes and simmer with the remaining ingredients until the apples are soft. They should not fall apart. Remove from heat and let cool.
In the meantime, prepare the Blunzn. Cut the Blunzn into not too thin slices. Make the breadcrumbs out of the rolls. Beat the eggs with a dash of milk. Set up a breading line: First a plate with flour, then with the eggs and then with the breadcrumbs. Bread the blunz slices in this order.
In a pan, fry the Blunzn slices in clarified butter until golden brown.
Serve the Blunzn with apple compote.
