Roast the herring fillets over medium heat. Mix all other ingredients together in a saucepan, bring to a boil and pour over the herring fillets. Leave to stand for 24 hours.

Roast potatoes: make the potatoes, peel them and cut them into even slices. Heat oil in a frying pan and fry the potato slices over medium heat until crispy. Add the bacon cubes and the finely sliced shallots and fry for about three minutes. Finally, season with salt and pepper and refine with parsley.

Lettuce: Remove the hearts from the lettuce and cut them into quarters. Mix the yogurt with the juice of one lemon, sugar and the lemon peel and pour over the lettuce hearts form. Garnish with chives and with radishes cut into strips.

Our tip: Use a deliciously spicy bacon for a delicious touch!
