Gitzi Leg Braised in White Wine

Marinade: chop kitchen herbs, press garlic and mix with all ingredients.

Rub it into the shredded meat. Preheat the stove to 180 °C. Cut the celery into eighths. Place in an ovenproof dish or roasting pan with the remaining vegetables, bay leaf spice and cloves.

Fry the Gitzi leg in hot clarified butter for 10 minutes. Place on top of the vegetables. Add wine and gravy, the drumstick should be almost covered. Steam in the middle of the oven with the lid closed for 1 hour, turn to the other side after halfway through. Cooking test: pierce the meat with a carving fork, if it can be pulled out easily, the gitzi is done. Serve with vegetables, mashed potatoes and jus.
