Rinse the gooseberries, flower base and stem ends do not need to be removed.

Place in a saucepan with the sugar and steam in a bain-marie with the lid on for about 30 minutes, until the gooseberries are quite soft. Drain off the excess liquid (so that the gooseberry sauce does not become watery). Then strain the gooseberries through a sieve.

When the puree is completely cool, stir in the whipped cream and perhaps add more sugar.

Rhubarb dish requires more sugar than the gooseberry dish, it is best to use dark cane sugar. After cooking, be sure to drain the rhubarb in a colander so that the excess juices run off before folding in the whipped cream. The brown sugar gives the rhubarb an exceptionally full flavor and a beautiful color.
