For the carrot pancakes, grate the carrots in a bowl. Chop the spring onion and add. Add breadcrumbs, eggs, and pamesan to the bowl and mix.

Season with salt and pepper. Heat pan with oil and form patties and place in hot pan. Fry for a few minutes, turning in between.

In another pan, fry the sliced mushrooms and add the sour cream. Season with salt.

Serve together with the carrot pancakes.
