For the dumplings with spinach pesto, cook the dumplings according to package directions and set aside. Peel garlic, wash spinach, remove stems.
Place spinach, garlic, pine nuts, Parmesan cheese, olive oil, pepper and salt in a narrow, tall mixing bowl and blend until fine.
Place the dumplings in a tall pan, pour the pesto over them, and heat through, turning several times.
Taste again and season if necessary. Arrange the dumplings with spinach pesto on plates and sprinkle with parmesan.
