Instructions:

For the roast beef sandwich with lettuce hearts and pickles, first coat Beiried with mustard and pepper and sear on each side in a hot pan. Place on a wire rack and cook in a preheated oven at 180 °C (top/bottom heat) for 10 minutes. Then let cool and cut into thin strips.

Alternative: Cook at 120 °C up to 54 °C core temperature.

For the vinaigrette, mix all ingredients vigorously with a whisk.

Marinate lettuce hearts with the vinaigrette.

Butter salt sticks and top with marinated lettuce hearts leaves. Finish with slices of pickles and sliced roast beef and serve the roast beef sandwich with lettuce hearts and pickles.
