Brush the meat with oil on all sides. Place on the hot grill grate with the fat side down and grill for 20-half hours. Turn over frequently.

Wrap the piece of meat tightly in aluminum foil and leave next to the fire for another 15 minutes or so to allow the broth to distribute evenly.

Before serving, sprinkle with freshly ground pepper and salt and cut into slices.

Serve with french fries and a fresh leaf salad. Herb butter or possibly a barbecue sauce also tastes great with it.

Our tip: It is best to use fresh herbs for a particularly good flavor!
