Chicory Soup with Bacon

Instructions:

Clean chicory, rinse. Cut out stinky ends in the shape of a wedge. .

Cut leaves diagonally into strips. Sprinkle with half of the lemon juice.

Cut bacon into cubes, fry. Set aside some bacon cubes for garnish.

Remove the skin from the onion and dice. Sauté in bacon fat for 5 minutes until soft. Add the chicory strips (reserve a small mass). Sauté for 3 minutes, season with curry, salt and pepper.

Pour the clear soup. Make everything 5 min. Fold in crème fraîche, let bubble up. Add sauce thickener. Season with remaining juice of one lemon, sugar and salt.

Before serving, sprinkle with the remaining bacon cubes and chicory strips.
