For the baked chicory with goat cheese and ham, cut the bottom edge off the chicory. Cook the chicory in a pot with enough salted water for about 3 minutes. Then drain well, cut in half lengthwise and remove the hard core.

Preheat the oven to 180 degrees, spread the Coburg ham on the work surface and place the goat cheese on top. Place the chicory halves on top and sprinkle with thyme, wrap the cheese and ham around the chicory.

Brush a baking dish with half of the olive oil and place the chicory parcels inside. Drizzle with the remaining olive oil, place in the oven and bake until golden brown, about 20 minutes. Remove from the oven and let the baked chicory with goat cheese and ham rest for about 5 minutes.
