For the salsify sauce, cut the salsify into pieces (about 1 cm long). Dice the onion finely.

Heat butter in a saucepan, sauté salsify and onion cubes in it. Add almonds, brown briefly and deglaze with water.

Simmer for about 10 minutes. Meanwhile, chop chives and parsley. Puree sauce, add chives and parsley.

Season the black salsify sauce with salt and pepper.
