Cut out the apples, remove the skin, cut them into slices and sprinkle with the juice of one lemon. Remove skin from blunzen and cut slices about 2 centimeters wide. Mix two yolks.

Peel onions, cut into fine rings. Melt 1 tbsp butter in a frying pan with 1 tbsp sugar and caramelize half of the apple rings in it on both sides. Cool. Do the same with the second half of the apples. Roll out puff pastry and cut lengthwise into two on the spot halves. Place cooled apple slices 3-4 inches apart on the centers of one half of the dough, form a slice of blunzen on each apple slice, season very sparingly with a tiny bit of cilantro. Brush the edges of the dough and the spaces in between with egg yolk, shape the second half of the dough over it and press it down gently. Cut excess dough into small pieces and cut out dumplings in rectangular small squares. Form on a baking sheet lined with parchment paper. Proceed in the same way with the second roll of dough and the remaining ingredients. Preheat the oven to 200 °C.
