Olive Semolina Tartlet with Marinated Melanzani

For the olive semolina tartlet with marinated melanzani, boil the water, add butter and salt, pour in the semolina and let it thicken while stirring on low heat. Then fold in the olives and spread the mixture about 1 cm high in a shallow mold brushed with oil or on a baking sheet. Let cool and cut out 8 circles. Cut the melanzani into 4-5 mm thick slices, sprinkle with salt and let stand for about 20 minutes. Pat dry and fry in olive oil on both sides.

Place in a bowl and sprinkle garlic, herbs and cayenne pepper over each melanzani slice. When all the slices are browned and seasoned, drizzle a little olive oil over the top at the end.

Place a dollop of goat’s cheese on each semolina tartlet with a teaspoon.

Place 1-2 folded slices of melanzani on top, secure with a sprig of rosemary if desired, and serve the olive semolina tarts with marinated melanzani.
