Finely puree the smoked trout fillet with yogurt in a blender and season with salt, pepper and lemon juice. Then mix in the dissolved gelatine leaves, finely chopped smoked salmon and chopped dill. Finally, fold in the half-whipped cream and pour into Dariol molds or coffee cups lined with plastic wrap and refrigerate for about 4 hours. Arrange the leaf salad of your choice in a pleasing way, marinate with olive oil dressing. Place the smoked trout parfait on top and serve.
