Make the potatoes in salted water, steam and press through the press. Season with nutmeg, salt, pepper and chopped marjoram.

Add semolina, cornstarch and egg yolks with the melted butter and knead into a smooth dough.

Depending on the type of potato, add a little more flour and cornstarch: start with too little… Consistency: like a soft yeast dough.

Then pour the dough into a greased mold, roll out 0, 5cm thick and smooth a 3cm high edge.

Radish filling: blanch the radish strips. Mix milk, whipping cream and eggs, season with salt, pepper and nutmeg and mix with the still warm, well drained radish strips, add parsley, mix well. On top of it, pour the amount on the dough in the mold and spread it smoothly. Bake at 180 degrees for about twenty-five minutes.

In the meantime, cook the radish vinaigrette: Prepare the vinegar with the oil and spices to make a salad dressing and add the radishes and chives before serving.

To serve, cut the lukewarm cake into even pieces and spread evenly on the plates, bring to the table with the salad dressing.
