A simple but delicious cake recipe:
Knead sugar, flour, vanilla sugar, egg and small cubes of fat into a firm shortcrust pastry. Wrap in foil and leave to cool for an hour. Preheat oven to 175° Celsius (gas: level 2). Roll out dough on a lightly floured work surface until 2-3mm thin. Cut round cookies in two different sizes (e.g. 4 and 5 cm ø). Cut a small hole in the center of each of the smaller circles. Place all cookies on greased or alternatively parchment paper lined baking sheets.
Bake in oven for 10-12 min.
Spread jam or jelly on larger cookies, place a small ring of dough on each. Dust with fine sugar and let cool.
