For the apricot puff pastry, cream butter and sugar, gradually beat in egg yolks and almond paste, then add lemon juice, lemon zest, salt and flour and quickly knead into a smooth dough. Chill the dough for 1/2 hour and in the meantime preheat the oven to 200°.

Roll out the dough and on a floured surface cut out circles 4 millimeters thick, 4 to 5 centimeters in diameter and place them tightly on a baking sheet lined with baking paper.

Beat egg white with water briefly and brush the cookies with it. Bake for 10 to 20 minutes on the middle rack and brush the still warm dough slices with warm apricot jam and sprinkle with chopped almonds.

Sprinkle apricot puff pastry with powdered sugar before serving.
