For the zucchini with mozzarella, cut the zucchini lengthwise into thin strips – preferably with a peeler.

Sauté quickly on both sides in hot oil, season with salt and pepper. Add the garlic pressed through towards the end of the frying time so that it does not burn in the hot pan.

Cut the mozzarella into cubes. Place one cheese cube, one teaspoon of tomato puree, one parsley leaf and one basil leaf on each end of the zucchini strips and roll up. Layer the rolls side by side in an ovenproof dish.

Blanch the tomatoes in hot water, skin and dice. Layer with the remaining cheese between the rolls, season with salt and pepper and drizzle with olive oil.

Bake the zucchini with mozzarella in a heated oven at 200 degrees for about 20 minutes.
