For the baked potato with avocado dip, wash the potatoes, brush them well and cut them in half lengthwise.

Line a baking tray with aluminum foil, oil and sprinkle with sesame seeds.

Spread the potatoes on it and bake at about 200 °C for about an hour. After half an hour, turn the potatoes once and drizzle with oil if necessary.

For the avocado dip, cut the avocado in half, pit it and poke out the flesh with a spoon.

Immediately sprinkle with the lemon juice and mash with a fork.

Season the crème fraîche with salt and pepper and mix with the mashed avocado.

Mix the sprouts into the dip.

Serve the baked potato with avocado dip immediately.
