For the wine foam sauce, mix the yolks with the starch flour. Add the sugar and the white wine. Fill a larger saucepan a good half full with water, heat to just below boiling point.

Place a second smaller saucepan with the above ingredients in the hot water ( water bath ) and whisk the contents until a thick, frothy sauce is formed.
