For the foam soup, boil down either wine, beer or must with onions, bay leaves and star anise to approx. 125 ml and strain. Pour in soup, stir in cream and tomato paste (gives a light pink color) and bring to a boil.

Mix in flour butter and thicken the soup with it, bring to the boil and cook well for a few more minutes. Season to taste with salt and a little white pepper and star anise or cinnamon.

Blend in a tower blender or with a hand blender, adding a little more cold butter as needed. Serve with crusty toasted bread cubes or Kletzenbrot rusks.

For the Kletzenbrot rusk, cut the Kletzenbrot into thin slices and slowly bake in the oven at about 70 °C until crispy.
