For the lecho vegetables, first sauté the finely chopped onions in a little oil until translucent. Wash the various peppers, remove the seeds, cut them into not too small pieces and sauté them.

Meanwhile, cut the tomatoes into pieces – add. Season with salt and pepper. Add the garlic clove. Sauté for at least 10 minutes. Add a little water if necessary.

Meanwhile, dice the zucchini (if the skin is too hard, peel). Steam again for about 10 – 15 minutes, adding a little water whenever necessary. Season the lecho vegetables to taste and serve.
