For the vegetable side dish, first finely chop the onion and sauté in olive oil until translucent. Finely chop the peeled carrots, bell bell pepper, zucchini and melanzani and sauté until hot.

Season with cumin, salt, pepper, finely chopped parsley and tomato flakes. Serve the vegetable garnish.
