Melanzani Salad with Mushrooms, Feta and Mozzarella Cheese

For the melanzani salad, cut the melanzani into slices. Sprinkle with a little salt, pour water over them and set aside for 1/2 hour to get rid of the bitter taste.

Wash the mushrooms and cut them in half. Wash French beans, cut off the ends and cut into 2-3 cm small pieces.

Wash and quarter the peppers. Grill the melanzani, mushrooms, French beans and peppers. Cut grilled melanzani and peppers into pieces about 1 cm wide. Place in a large salad bowl with mushrooms and French beans.

Slice tomatoes, dice feta and mozzarella. Chop cilantro and parsley (or dill), add to salad bowl and mix well with other ingredients.

For the sauce, mix all the ingredients and pour over the salad. Once again mix everything well and serve the melanzani salad.
