Instructions:

First preheat the oven to 180 °C.

Cut the melanzani in half and hollow them out with a spoon. Place the hollowed out halves on a baking tray and put in the oven for 12 minutes.

In the meantime, cut the insides into cubes. Peel onion and cut into fine rings. Quarter tomatoes, remove seeds and dice. Cut bell bell pepper into strips.

Heat olive oil in a pan, add onion and mince. Sauté for about 5 minutes over medium heat and season to taste. Add diced melanzani, bell bell pepper strips and thyme as well and simmer for another 5 minutes. Finally, fold in tomatoes.

Remove tray from oven and spread stuffing on top of melanzanini halves.

Partially remove the St. Albray rind and thinly slice the cheese. Top the melanzani with it and gratinate in the oven for another 10 minutes.
