Instructions:

For the oxtail soup, clean and wash the vegetables. Wash and dry the oxtails.

Brown the oxtail all around in THEA. Add coarsely diced soup vegetables, halved onion and garlic and fry as well.

Deglaze with a good 2 l of cold water. Add spices, bring to a boil, reduce heat, add sherry and simmer gently for at least 2 hours.

In between, skim off protein foam and fat. Strain the soup through a fine sieve, season with bouillon.

Remove the meat from the bones and serve the oxtail soup with the diced vegetables and parsley.
