Instructions:

For the gin and tonic tiramisu, first prepare the syrup. Bring the sugar to the boil with water and lime juice, allow to cool and then mix with the gin and tonic.

For the cream, whip the whipped cream with vanilla sugar until stiff. Mix the mascarpone with the gin, tonic, half of the lime zest and the sugar, then fold in the whipped cream.

Dip the biscuits in the syrup and layer in a baking dish. Alternate layers of cream and biscotti until all ingredients are used up (finish with a layer of mascarpone cream).

Chill the gin and tonic tiramisu for at least 2 hours and serve as desired, e.g. with lime zest or thin strips of cucumber.
