For sweet potato wedges, first preheat the oven to 220 °C.
Wash the sweet potatoes thoroughly, but do not peel them, and cut them into cubes or wedges. Boil in salted water until al dente, they must not be too soft in any case.
Peel the onion and cut into rough pieces.
Line a baking tray with baking paper. Spread the sweet potatoes and onion on the baking sheet. Drizzle olive oil over them and place thyme sprigs on top. Lastly, sprinkle the flaked almonds on top.
Bake the sweet potato wedges for about 20-30 minutes, at least until they are soft inside and already a little crispy on the outside.
Sprinkle with salt before serving.
