Swedish Salmon Gratin

Instructions:

1. rinse potatoes and make in water about 20 minutes.

Rinse, remove the peel and leave to cool.

Remove the peel from the onions and garlic and finely dice them. Heat 1 tbsp. fat in saucepan. Sauté garlic and half onions in it. Add spinach unthawed, pour 100 ml water. Cover and defrost over medium heat for about 15 minutes. Drain if necessary. Season with salt and pepper.

3. rinse salmon, cut into cubes. Drizzle with juice of one lemon and pull a little. Cut potatoes into slices.

4. Heat 2 tbsp. fat in saucepan, sauté rest of onions. Sauté flour in it. Add milk, except for 5 tablespoons. Bring to a boil and simmer for about 5 minutes. Let 75 g cheese melt in the sauce. Season with salt, pepper and a pinch of nutmeg. Mix 5 tbsp milk and eggs and stir into the sauce (do not make more!).

5. layer potatoes, spinach and salmon in a greased gratin dish (approx.

30 cm long). Pour sauce over, sprinkle with remaining cheese.

Bake in a heated kitchen oven (electric oven: 200 °C /circulating air: 175 °C /gas: level 3) for 30-40 minutes, garnish.
