Instructions:

Boil peeled potatoes in salted water until soft, strain, cool briefly and strain.

Steam blanched spinach in butter, season, let cool and chop very finely.

Knead spinach and potatoes with flour, yolks and grated cheese to a not too firm mass. Season again to taste.

Form dumplings with wet hands and cook them in boiling salted water.

Meanwhile, heat strips of ham in butter, pour in cream, bring to a boil, add salt, pepper, reduce heat, liquefy with egg yolk(s) and, as soon as the sauce is nice and creamy, pour over the spinach dumplings.
