For the sesame bagels with salmon, first melt yeast and sugar in lukewarm water. Knead in flour, salt and butter. Let rise for 40 minutes.
Divide into 12 pieces, shape each into a ball, and make a hole in the center with floured wooden spoon. Then place bagels in boiling water for one minute. Drain, sprinkle with sesame seeds. Bake at 225 °C for 20 minutes.
Slice bagels open. Spread with cream cheese and top with smoked salmon and lettuce. If you like, you can sprinkle the cream cheese with a little chives or add slices of tomatoes to the sesame bagels with salmon.
