Sage butter:


Make strudel dough as described in the basic recipe.

Clean spinach and rinse thoroughly. Place dripping wet in a large saucepan and drop together over medium heat. Drain and cool. Finely dice vegetable onion and saute in hot fat until translucent. Mix spinach, ricotta, cooled Parmesan, egg yolks, onion, pepper, nutmeg, salt, juice of one lemon and possibly raisins.

Mix and season. Roll out the dough and fill it as described in the basic recipe. Brush strudel with egg yolk.

Bake in a heated oven at 200 °C for 30 minutes.

To make sage butter: fry sage leaves in hot butter at low temperature. Make sure that the butter does not turn brown.
