For the seitan in tomato sauce, peel the garlic, chop it finely and mix it with the olive oil and a dash of lemon juice. Salt, pepper, add dried herbs and put the sliced tofu in the marinade. It is best to let it marinate for a few hours in the refrigerator.

Meanwhile, peel and finely chop the onions. Remove the seeds from the bell bell pepper and dice it as well as the zucchini. Cut the peeled tomatoes from the can into coarse pieces.

Heat some olive oil in a pan and sear the marinated seitan on both sides, remove from the pan and set aside under aluminum foil.

In the same pan now sauté the onion, add the zucchini cubes and after about 3-5 minutes also add the bell bell pepper. Deglaze with some balsamic vinegar and a little tomato paste. Pour everything with the tomato sauce and the peeled tomatoes. Season with salt, pepper, oregano, a bay leaf and marjoram. Add the seitan and heat briefly. Remove the seitan from the heat and stir in fresh chopped basil.

The seitan in tomato sauce tastes best when served with rice or polenta.
