A bean recipe for every taste:

Clean the beans and make them in one l of water with 1 tbsp of salt for five min. Next, quench in water with ice cubes to prevent them from cooking. Just before serving, toss in butter with bread crumbs. Season to taste with salt and freshly ground pepper.

For the vegetable gnocchi, clean and dice the vegetables. Sauté the onion cubes in butter, then add the cubes of bell bell pepper, carrots, mushrooms and artichoke base. Stir everything for two or three minutes, then extinguish with white wine. Simmer for 15 minutes and add the mustard. Then blend the whole thing in a hand blender or with a hand blender. Season to taste with salt and freshly ground pepper. Before serving, form dumplings with two tablespoons.

Line a mug with cling film overlapping, beat the egg and form the inside. Season with salt and pepper and add tiny cubes of onion and ham to taste. Tie the ends of the foil very tightly together. Put four eggs prepared in this way into boiling water. If you like soft yolks, cook them in about 8 min. Hard eggs will be within 10 to 12 min.

Serving: In the center of each plate form the beans. Surround each with three dumplings of the vegetable puree. On top of the beans, place the egg, which has been removed from the foil. Sprinkle everything with finely chopped fresh savory.
