Wash the strawberries and drain well, then first remove the stalks and leaves and weigh them.

Mash the strawberries to a thin pulp and add the juice of one lemon.

Add jelling sugar, stirring to bring to a boil.

Cook for 10 minutes over high heat.

Pour into jars while still hot and seal tightly.
