Perhaps your new favorite bean dish:

Prepare Brussels sprouts (ready to cook, e.g. peel, remove woody parts and dirt), cut roses in half. Cut ribs into cubes.

Bring soup to a boil, add sour beets, sauerkraut, Brussels sprouts, rippli and beans, simmer gently for about ten minutes with lid closed.

In the meantime, cut bread into cubes or triangles and toast in hot oil until crisp.

Season the soup and serve. Spread the bread pieces evenly on top.
