Instructions:

Mix sugar with one eighth of a liter of water to make a thick syrup. Mix yolks, mix with sugar syrup and pour through a fine sieve. Add the lemon peel. Brush a shallow mold or 4 serving dishes (each holding about 1/8 l) with bitter almond oil and pour in mixture. Prepare a lightly simmering water bath in a wide saucepan. Place the mixture in the pan or ramekins and cover the saucepan. After about 10 minutes of cooking, check by pressing with your finger whether the sky bacon has already set. If not, extend the cooking time by a few minutes.

Cool the finished Himmelsspeckchen, turn them out and refrigerate for at least half an hour. They taste exceptionally delicious when well chilled.

Our tip: Use a wonderfully spicy bacon for a delicious touch!
