Knead egg, flour, water, oil and a little salt into a dough and rest covered and cooled for at least 1 hour. Then, using a pasta machine, roll out narrow sheets of dough and cut into squares (10×10 cm). In a saucepan, sauté the shallots in butter. Dust with 1 tsp. flour and add the fish stock. Add white wine and simmer gently for 10 minutes. Add whipped cream and do it again for a few minutes. Last but not least, add the crab butter and season well with salt and freshly ground pepper. Cut the cucumbers into balls. Cut the Frutti di Mare into large pieces and sauté them in a frying pan with olive oil, add the cucumbers and tomatoes and sauté. (Add a little sauce if necessary.) The Frutti di Mare should be just cooked. Briefly boil the pasta dough in salted water and place a slice on each plate. Mix the fish sauce as well as the Frutti di Mare, season and spread evenly on the pasta plates. Cover with a second pasta plate and sprinkle with the plucked chervil.
