Fillets of Sea Bream in a Bed of Vegetables

Perhaps your new favorite bean dish:

Prepare the beans ready to cook and cut in half. Cook in boiling hot salted water for 4-5 minutes until tender. Drain and drain well.

Peel the potatoes and cut them into fine slices, the fastest way to do this is with a cucumber slicer. Peel the onions and cut them into thin rings.

Put the beans, potatoes and onions in a wide baking dish and pour the soup over them. Cover with aluminum foil. Meanwhile, bake the vegetables in the oven heated to 180 °C on the second rack from the bottom for 20 minutes.

In the meantime, prepare the melanzane and the tomatoes (peel, remove woody parts and dirt) and cut them into 5 mm thick slices. Season with salt and pepper.

After 20 min of baking, place the slices of melanzane and tomato in a flaky manner on top of the bean and strawberry vegetables and drizzle everything together with half of the olive oil. Bake the gratin uncovered for another 20 minutes in a 180 °C oven.

In the meantime, feel the fish fillets with your fingertips for bones and remove them if necessary. Sprinkle the fish with the juice of one lemon and season with salt and pepper. Pluck the thyme leaves from the branches and sprinkle over the fish fillets.

Place the fish fillets on the bed of vegetables and drizzle with the remaining olive oil. Bake the gratin in the oven at 180 °C for another 15-20 min.

The dish also tastes very good lukewarm.
