Instructions:

Rinse the pears, remove the core and cut them into quarters.

Mix eggs, flour, milk into a dough, stir in Parmesan cheese, season with salt and pepper. Lightly caramelize sugar in frying pan, extinguish with currant juice and lime juice, add cranberries, simmer three to four minutes.

Turn in slices of ham, place on baking tray and dry in oven at 120 °C. Pull the pear slices through the batter, place them in the hot clarified butter (180 °C) and bake until golden brown.

Put the pear slices on a plate, spread the sauce evenly all around, offer the lettuce dressed with vinegar-oil marinade and put the ham chips on top.

Tip: It is best to use your favorite ham – then your dish will taste twice as good!
