Roast pine nuts without fat in a pan until golden. Let cool and then pound them in a mortar. Pluck and wash the parsley leaves, shake them out well and chop very finely. Peel the garlic and also chop finely. Grate the Parmesan cheese. Blend all ingredients, adding olive oil drop by drop, with a blender until smooth. Season to taste with lemon juice, salt and pepper.
