Grate or mix 150 g of oatmeal into flour.

Dissolve yeast in water and add to flour, oat flour, oat flakes, salt and sugar.

Mix with a food processor or hand mixer and let rise for 30 minutes.

Remove dough from bowl, transfer to a floured work surface and fold like a parcel.

Let rise again for 30 minutes.

Roll the bread in the oatmeal and place in a proofing basket, cover with plastic wrap and let rise for 1 hour.

Preheat the oven to 210 °C, place the bread dough from the proofing basket on the baking tray and bake for 35-40 minutes at 210 °C convection oven.
