Parmesan Mackaroni with Roasted Onions

Bring plenty of salted water to the boil. Put the mackaroni in and cook until al dente.

In the meantime, mix crème fraîche and parmesan. Season with paprika, salt and pepper.

Drain the mackaroni in a colander and drain well. Mix with the cheese cream and place in a well-buttered baking dish sprinkled with breadcrumbs.

Meanwhile, bake the Parmesan Macaroni in the oven heated to 200 degrees on the second rack from the bottom for about twenty minutes.

Peel the onions, halve them and cut them into strips. Put the flour in a fine sieve and dust the onions with it. Mix well so that they are evenly coated with flour.

Heat half of the clarified butter in a frying pan and gently fry half of the onions until crispy brown. Remove from the frying pan, but do not cover! Roast the remaining onions in the same way. Finally, add the first fried onion portion again to the second unit in the frying pan, season everything together lightly with salt and just get well hot. Then spread evenly over the baked gratin and bring to the table on the spot.
