For the milk plait, prepare a dampfl with half of the milk, the yeast and some flour and let it rise in a warm place (about 10-15 minutes). Heat the remaining milk and dissolve sugar, butter and salt in it.
Whisk egg, yolk, VZ and lemon zest. Add the dampfl and the remaining flour and knead well. Let rest warm for at least 45 minutes. The mixture should have doubled in size, then beat/knead well again and divide into 3 parts.
Roll these into strands and braid into a plait. Let rise again for about 30 minutes. In the meantime, preheat oven to 160 °C top/bottom heat, beat egg, brush braid and bake for about 40 minutes until golden brown.
Beat one egg with a dash of whipped cream or milk and sprinkle with almond flakes before baking!
