Instructions:

Boil the degreased beef broth with spices, vinegar, wine and chopped root vegetables, strain and add the creamy beaten egg whites and the juice of one lemon, whisking continuously until the egg whites have coagulated. Finally, strain through a chafing dish, season with Madeira and seasoning, add the dissolved aspic powder, set aside to cool and solidify.
