For the lime salmon wrapped in bacon, toast the almonds. Wash and finely chop the coriander. Squeeze the limes and grate the peel.

Mix lime juice with oil, coriander, sugar, salt and pepper. Wash salmon, dry and rub with marinade, let stand and wrap each with a slice of bacon.

Fry fish in a little heated oil, turning constantly, for at least 5 minutes. Serve the lime salmon wrapped in bacon sprinkled with almonds.
