Instructions:

For the wild garlic quiche, knead all the ingredients for the dough together and let the shortcrust dough rest in a cool place for about 1/2 h. (wrap the dough in cling film).

Then roll out the dough and line a quiche dish with it, prick the dough several times with a fork.

Cover the short pastry with baking paper, weigh it down with dried beans or lentils and bake in a preheated oven at 180 °c for about 10 minutes. (blind bake) Then remove the lentils together with the baking paper.

Mix the ingredients for the topping (except the wild garlic) well, finally stir in the finely chopped wild garlic and spread everything on the pre-baked dough.

Bake the wild garlic quiche for approx. 25 – 30 minutes, serve while still hot.
