Instructions:

Mix sugar, baking powder, flour and salt, heap on the surface. Press an indentation in the center. Pour in egg yolks and lemon juice. Put light butter in flakes on the edge.

Sprinkle lemon zest on top. Quickly knead together from the outside in to form a smooth dough. Wrap dough in plastic wrap and chill for at least an hour.

Roll out thinly in batches on lightly floured surface. Cut out figures and place on baking sheet lined with parchment paper. Bake in heated oven at 200 °C (fan oven 180 °C ) for 8-10 min. The cookies should not get too dark. Cool on a cooling rack.

* Note on sugar:

Fructose can be used or the same mass of household sugar, which is now also allowed to diabetics in small quantities according to the newer dietary recommendations. The slightly lower sweetening power of table sugar can be compensated by adding liquid sweetener as needed. This does not change the calories and carbohydrates of the recipe.
