Heat the oil in the broiler/frying pan. Rub the fillet steaks dry, add and sear for 1 minute on each side, season. Put the frying pan away and cook the meat for 4 to 5 minutes. Arrange on hot plates, keep warm.

Deglaze the roast stock with the wine, boil, then add soup and cream, bring to the boil and season, add to the meat to the table.
